Only been using for a few minuets and it's what we've been
searching for with a few minor tweaks;
Is there a way I can customize the page layout grids - you have
several common ones, but we also have need for 1/9, 1/8 & 1/6
block layouts.
Is there a way to add pages that represent gatefolds/inserts
without being counted as part of the flatpan?

There is currently no way to do what you are asking. The predefined page layouts are fixed, but we have had several request for more layouts and are considering to add more.
There is no way currently to add pages that don't count as a part of the flatplan.
